I've studied all 68 genders and for the most part they result in identifying as male, female, non binary, or different variations of the three. It is possible to identify as multiple genders and very easy to do as a cisgender man, and a cishet man, I already fall into 2 gender identities. These words don't change reality, they just provide more context to my unique human experience. It's impossible to assume someone's gender based on physical appearance, but it is possible to assume SEX based on physical appearance. For the most part, this is a language that not many people can speak, but no matter what side of the argument you're on, you should educate yourself on the subject before engaging in conversation.
