This is the point in the movie where Zack begins to genuinely fall in love with her. It's not just character development for Laney, but it's character development for him as well. Because, he's starting to realize how bad the bet is.

Yes, when Laney says that she promised not to let them see her cry, it suggests that she never allowed herself to be vulnerable with her peers at school. I totally can relate to what she is saying. As a closetted Queer latinx student in a predominantly white school, you put on your armour, numb yourself and face the public everyday. Your strong and brave but your certainly not relaxed, or enjoying yourself or trusting anyone. In some ways, you persevere and find safe spaces where you can relax alittle (in Laney's case, the Art class) but in other ways, you live with a frozen heart. So for Laney to have fun with Zack and then cry in front of Taylor shows how much her heart has thawed and how much she is allowing herself to finally feel and experience her life. It's a testament to the growth that Zack's friendship sparks in her. It's also something that her art teacher acknowledges at the end of the movie, when she notes that Laney's artwork has transformed, becoming more personal and vulnerable in nature.

So, apparently it is on the outside that counts, since in pretty much all of these films/shows, once the female (or in some cases male) character starts to look good, that's when people start to like/pay attention to them, & it has been this way ever since My Fair Lady, & continued in films like Pretty Woman, She's All That, & The Princess Diaries.
