I wanted to a cook a beautiful fruit sponge recipe this week, I've used pears, originally Jamie Oliver used peaches, this is such an easy and delicious pudding that's very quick to do. You can use most fruits and the combination when cooked with the sponge is magical, it's so good!
Also, I make my own custard to accompany this classic pud which is taken from an Eve's pudding. Enjoy!
Ingredients-
Sponge
➤ 4 ripe pears, quartered and cored
➤ 4 heaped tbsp demerara sugar
➤ 4 tbsp water
➤ Half a vanilla pod, scored lengthwise and seeds removed
➤ 125g butter, room temperature
➤ 125g caster sugar
➤ 2 large free-range eggs
➤ 125g self-raising flour
For the custard
➤ 3 egg yolks
➤ The other half a vanilla pod, scored lengthwise and seeds removed
➤ 120ml double cream
➤ 60g castor sugar
Recipe-
1. Firstly, take your butter out of the fridge and preheat your oven to 180°C.
2. Having washed your pears, quarter and core them and place them into a saucepan along with the demerara sugar and water.
3. Next blend the butter and caster sugar together until light and fluffy and add in your eggs, one at a time and mix in.
4. When the eggs have been mixed in, sieve and add your self-raising flour.
5. Now grease a baking dish and lightly coat with sugar.
6. Add in your poached pears but remember to take the vanilla pod out and dollop the sponge mix in and around the fruit. You don't need to smooth it over, keep it rustic.
7. Bake in the oven for around 30-40 minutes. To make the custard, separate the 3 eggs and add the castor sugar to the egg yolks and mix.
8. Add the other half of the vanilla pod to the cream and bring to just under simmering point, then take off the heat and pour gently into the eggs and sugar, whisking all of the time. Now return to the heat and stir until thickened, serve generously with the pudding.
