It's actually done from the tv control room. The producers are typically seated in the back row overseeing all story elements while the director is seated in front with the technical director (TD) and graphics person. The director first tells the camera operators which shots to line up and then they tell the technical director (TD) which camera shot to select. There can also be an assistant director (AD) tracking the script and feeding upcoming information to the director, so they know what is needed next. If picture in picture or a specific transition is needed, the TD will include that as well before selecting the shots you see. It's a very advanced position because you need to know the board well, have excellent timing, and remain calm under pressure. The best control rooms are quiet and calm because everyone is focused on the timing of various elements: the director, TD, graphics, teleprompter, tape & audio packages. Once the shot is selected, there's no going back. It's basically live editing because you control what the viewer sees. They will do a rehearsal to get a sense of what shots they want to use at certain times in a performance and all shows have a script they follow, but timing remains crucial. Here they likely knew that Mariah would be using a prerecorded track for the climax, so they knew not to do a close-up on her face.

It’s obvious she was actually singing live during the filming of the show. But you can see her pull the mic far away from her mouth suddenly indicating that she didn’t hit the note she was planning on hitting so in post they dubbed this part.

I can see her choosing to lip butterfly on account it’s a new song and she hadn’t been singing it long enough to feel confident with it vs a song like hero which she fully comfortable with singing live. But when Mariah lips she always holds the mic close to her mouth. But since she pulled the mic away during the bridge in hero i believe she was singing live and just ended up dubbing that part
