You can theoretically force fruit the logs every 4-8 weeks, but the longer you wait in between fruiting, the more production you'll get. I wait a minimum of 8 weeks, but 12 is probably better. If you don't live in area with a winter cold enough for the mycelium to go dormant, that means four crops per year. Otherwise, you'd get four. Make enough logs to be able to stagger fruitings, and you'll constantly have a supply of fresh mushrooms. Shiitakes also dry extremely easily for long term storage.
