In Mario's journey through Bowser's brain, I saw other scenes from Mario Odyssey, the original 8 bit battle from the first game, an image of Mario pulling Bowser's tail, the battle from Mario 3, and Bowser in his Clown Car in a scene from Mario World.

You missed a couple, both in Mario Kart: Double Dash!!: * On both tracks with traffic, there's a truck that says "Super Chocolate" with a license plate of "W1-1", easiest to see on Mushroom Bridge. * The Battle course Tilt-a-Kart features the pixel Marios from Sunshine again and begins with a riff on the ground theme before going into a remix of Baby Park's music.
