Well, i am from Spain and i was tempted to claim this as an aioli but after some research, the oldest recorded garlic/oil sauce (basically what aioli and thum are) is egyptian... So shout out to all the Egyptians.

A small advice, I think it’s better if u press the chicken with something a bit heavy so it gets a bit of burn on it and that makes it tastier I think, one more thing some people smoke the chicken after cooking it by putting a فحمة with oil and leave the chicken a bit with the smoke and that’s because u are doing it at home and not grilling it so it get a bit of a grill taste, and I love ur videos thank u so much and best wishes, الله يوفقك

As a chef i’ll say that pressing the meat to get browning (mallard reaction) is a bad habit that dries the meat since pressing it removes most of the juices out of it, start with an oiled super hot pan, fat always down and wait till you have a nice colour while fighting the urge to move it drop the flames to medium low and watch it till its ready, extra advice do not cut the meat as soon as it is ready, leave it to rest for some minutes before cutting that will make it overflow with juices. صحة وعافية

You need a good blender/food processor for toum. I tried making it with a smoothie blender, didn’t work (way too watery). Just a heads for anyone who wants to try making it

It was watery because you rushed the oil so it seperates, try making thinner thread of oil with pauses also don’t forget the acid (lemon or vinegar)

@@PastelKenshi a smoothie blender doesn’t have the option of adding things when it’s blending. You put things in, and only then can you blend. It’s not meant to be used for thing kind of stuff hahaha

If you want to use less oil for the toum, you can try adding cornstarch and water into a saucepan and heat until it's a thick gel, then blend with the garlic and oil. My mother does this all the time and it tastes amazing! Just don't overuse the cornstarch mixture or it gets a jelly consistency (you could still them whisk or blend to make it better)

Hey, Ahmed. Your videos are awesome and I love to watch them. But some of the recipes do belong to Turkiye. (Take this for eg. Tawook is the pronunciation of Chicken / Tavuk in Turkish) There is nothing wrong with that and I'm really proud of you sharing them. But I would love to see you give us a basic credit at least. Keep it up!

I agree with you. however some arabic dishes and turkish dishes are very much tied to regions do to history so it's also become part of the cultures. For example In Turkiye lahmacun and Kunafe is arabic in origin but also very much eaten as part of the cuisine. Many Turkish people see it as theirs too.
