There’s a few things you missed. You didn’t really discuss Genji’s ultimate at all. There’s really not that much to discuss I guess, but you also forgot to mention that when he ults, he deflects with is katana instead of his wakizashi. Katanas are significantly more heavy than the short wakizashi, so the fact that he can deflect against 10 bastions (if a Genji on the other team deflects 5 bastions on your teams + another 5 bastions on their team) or 10 freaking black holes from Zarya makes him 10 times as powerful. Who knows, he may have the ability to end all life as we know it by slicing his katana through the earth. He may be holding back, and we have never seen his true potential.

Reaper is in a constant state of decomposing and regenerating. His current condition is purely biological and judging from the latest comic he probably looks like Deadpool judging from Ana's reaction when she pulled his mask off. The Life orbs you see in game is technically supposed to be the life energy he absorbs and leaves people as decayed pale corpses after entering a fight and it's possible that his shotguns are also of biological origin since the blasts leave a reddish color after shooting(indicating blood) and he seems to care little about them since he drops them and pulls new ones.

I always imagined Genji jumps by extending the bottoms of his robofeet and the second jump occurs when those extensions slam back in, creating the force necessary to create a pseudosolid surface for him to jump back off of. Since it took him some time to get used to his new body, and it has now been confirmed his legs are 100% mechanical, it is possible he has the ability to control them and this is one of the features he learned to time just right.

The 5 blue bastions should simultaneously shoot the red gengi, and he should reflect,. If this is done properly, Gengi can deflect bullets from 10 bastions at once.

also if multiple bastions are shooting at him, the deflection of a bullet every 5ms time they gave is a great AVERAGE, but what if multiple bastions' projectiles are coming at him at EXACTLY the same time with 0 variance in between and far enough apart to not be struck by the sword at the same time? Technically a black hole can only be formed by object a set amount of mass. That mass, however, must exceed a threshold well beyond the mass of our sun. It might take a star ten times the mass of the sun to become a black hole. So Zarya may not shooting an actual black hole. It is more likely that the electromagnets in her gun create a projectile that contains it's own gravitational force, henceforth "Graviton Surge". But this is a game so it wouldn't necessarily completely follow the laws of physics. In conclusion Genji is probably deflecting a projectile that contains its own gravitational force rather than an actual black hole.
