We checked out a new store in our city and brought the camera along. Also, cooked a vegetarian meal and made 1/3 of it vegan! It is a great one.
1 can black beans
1 can corn
1 can tomato/chilies or just diced tomatoes
1 cup sour cream
1 cup salsa or picante sauce
2 cups cooked brown rice
1 cup shredded cheese of your choice
Mix together and add to a greased casserole dish.
Top with additional cheese and green onions.
Bake at 350 for 50 minutes.
Serve as is or with chips!
