For future reference, you can put a nut on the stud and use a hammer to adjust the anchors. Your way worked the best, but you may not always have enough room. I have been doing this kind of work for 20yrs and unless you are diligent to keep the drill absolutely plumb, in both directions, the anchors will be crooked. It doesn't take much to misaligned them.

Congratulations on building a new shop. You did a great job driving the forklift. I wasn't laughing either watching that delivery guy walking under, and around those heavy loads. Some people have to learn the hard way. Is this new shop close to your house? Thanks for the videos and take care.
