I love the “The All White Look! “ You both have worked so hard. It looks amazing. Shiplap walls in the uk are not easy to put up as we have brick walls. It’s not easy, we can’t just nail it on. I always envy American homes as they nail gun everything in x

Can't you use masonry screws and screw furring strip vertically to the brick and then nail your planks horizontally? Personally I would love to have exposed brick.
