I am the blender. I do my honey different than most! I barrel age the honey first and dump it out. So whatever is left in the wood is all the honey you get. When bottling, we don't filter it. So bottles first on the line will have left honey than the end.

Now that sounds like a fun experiment - an earlier bottle versus a later from the same line. Thanks for the info. Love what Shortbarrel puts out and looking forward to trying some of your new Old Forth whiskies!!

Just got a bottle today and was just as surprised as you. Came from a Penelope Rio which is a sugar bomb and expected that. Much more subdued but delicious nonetheless.

Still haven't had the Rio but really want to try that one. Yes it's still good but was just surprised. We also did a blind of a few honey finishes that will be coming out soon...very surprising how it ranked in the blind!!!
