Phil all I can say is WOW! This is a brilliant compilation and distillation of our passion. You are incredibly skilled (photography, video, editing, audio, scripting... need I continue?). I think you pulled all the essential concepts in and explained them so clearly. I just finished "Bourbon" by Fred Minnick and it takes an entire book to summarize the shorter timeline of bourbon. You highlighted the interesting parallels of the boom and bust cycles especially with the rise of white liquors. Although I recommend Minnick's book, I will tell everyone who will listen to watch this masterpiece you have put out.

Phil - Watching your old videos for the second (or so) time; really appreciate your effort and diligence in researching the history of Scotch Whisky. I’ve been a small scale distiller for a while, about 20 gals a year for me and a few select friends. My goal has been to recreate an Islay type whiskey here in Texas; can’t recreate the smokiness of say a Laphroaig though, our water is very good, but leaches through limestone rather than peat. My recipe and process gives me a product that to some extent mimics the complex seaside character of Islay, but with only a lightly smokey element. Learning the history of Scotch through your videos makes my Aqua Vitae taste just that much better!

Most excellent Sir! I just flew past the Dalwhinnie today in my wee mx5 with the roof down. Beautiful Speyside just sells itself - as you whiff the crystal air and gawp at the magical vista. I was super lucky. Usually it's raining. After listening to your very well produced and super informative video, and after today's wheech through the highlands, it seems obvious that the combination of the senses in that place (and many other nooks in my land), is deeply reflected in the aqua vita ultima. I don't drink whisky, except a dram at Christmas. A double double of laphroig. It must be mixed slightly with (not cold) water, and sipped gently. It always amazes me, like a wheech through the high lands. But all beautifully warm, internal and eternal sir. Thanks.

Thanks, Tim!! There was evidence it was aged in wood before that, which I left out due to time. But yeah, it wasn't super common, and there were a lot of distilleries just selling new-make. The 3-year ageing rule definitely made the drink more premium. So true! It's so fundamental now, hard to think of it otherwise.

Damn dude. These videos are amazing! I'm having a talk with my whisky club about the whisky regions, and instead of doing a regular contemporary presentation about the distilleries in each area, their flavour profiles etc.; I want to put it in a more historical context because I find the geopolitical and economical factors that shaped each of them fascinating. One other interesting little tidbit I find worth noting about the history of Scotch is that a lot more of them would have been peaty. Not for the reasons we have heavily peated whiskies today, but probably because peat was so widely used in the past as a heat source. Cheers and I'm off to enjoy some of your other videos!

Awesome video Phil! I just ordered a bottle of Lagavulin 11 yr Offerman Edition: Guinness Cask Finish. I found it on the Australian “The Whisky Club” site. Joining is free but if you don’t “opt out” in time they automatically debit your account and send you a bottle of their monthly whisky. The Lagavulin os part of the add-in. So I opted out of the monthly whiskey (although the Bushmills 2011 Banyuls Cask did look tempting) and just added the Lagavulin Offerman Edition : )

Yeh really really good Phil. Excellent informative content, structure was logical and assisted with cramming so much information into a short time. Sensational and crams a 200 page book into 30 mins. Only recommendation I have is for you to practice the pronunciation of the Scot's tongue... may be difficult for a Kiwi!

Great video Phil. When did whisky distillers start using casks other than oak? Is the use of sherry, bourbon, wine etc... casks and modern whisky development?
