Interesting, I'm doing an experiement myself. I have two bottles going the traditional way and two in my IP on the sousvide setting 145 for 20 hours. When it's done I'll compare to some store bought (Neilson-Massey) and then compare with the other batch I just made in a year.

You used 1/2 the beans for the same amount of liquid. Pure extract is 1 oz beans by weight to 8 fluid oz of alcohol. It comes out darker if you use the same amount of beans

then you can use the spent beans to flavor your sugar just by putting them in the sugar jar. too expensive to throw away.

If you heat the vodka you are cooking off the alcohol. The alcohol is the preservative, so you are destroying that. I think you would have to keep it in the fridge. Just a thought. I may be wrong.

I have the PC original pressure cooker, not the Instapot. Would I put the trivet in the bottom since the PC model doesn’t have something called a steaming rack? I do the the steaming baskets if that would work? Did you say your funnel has a strainer in it? If so, can you provide a link? Since I have never made vanilla, I may adventure and try both methods like you. Thanks!

The steamer rack and trivet/wire rack are the same thing, I believe. It's just the bit that sits in the bottom of the pot to make sure things aren't sitting in the water. I think the steaming baskets would work great too! As far as the funnel with a strainer... I don't have one but now I do want one LOL!

Do not use a pressure cooker on a stovetop - only electronic pressure cooker like the instapot

You should have used the same amount of vanilla beans to be fair. More than likely, it would have been the same color after processing in the insta pot.

Throwing away the beans that's nuts you can use the old beans to make vanilla sugar, vanilla paste, grind it up for vanilla crystals, put them in another jar and make a mother jar

Hey it’s Christmas in July 😂,,,,, I have vanilla extract that I made the mother jar 5 years ago and I use vodka ,,,,,,,, my youngest is 2 years old ,,,,, this was a great adventure! I purchased my beans from slo food group , food grade A , very good prices but I have to admit it’s been 2 years since I bought a bunch and still have some,,,,,,, for best results you want to have them going at least 6 months,,,, starting now for the holidays is perfect ! Yes bourbon and vodka do have a different flavor , I like using vodka because the flavor is the same as extract but stronger,,,,, I’m doing the challenge since I have 3 bottles going !
