It’s a reference to the Shrek ride that was at universal studios where he came back as a ghost. When there was a graveyard scene similar to this the statue was shown.

God, this game looks visually SO bad, and yet even with these low-rez graphics, I remember it threatening to crash my computer CONSTANTLY. Oh, 2004.... Thanks for the nostalgia trip!
