They used suits that would capture the irl motion of the person in the suit and use those exact movements in the test. They didn't do that with the final movie.

The Shrek you see in this video was only a test. It was NOT meant to go into final production, as producer Katzenberg hated it and fired 80 people after seeing it. The final design of the "Farley Shrek" is a lot more closer than what we got in the final movie (take a look at artist Henrik Tamm's concept arts for to get an idea)
