I am usually quite lazy and throw all the noodles at once to get it over and done. But it makes sense to divide the portion so it doesn't overcrowd the wok. In the past I had always added more oil to prevent from sticking and wound up with greasy lo mein. I noticed you didn't add a lot of oil which is ideal. Thank you for another awesome video.

Hello! Hey, whatever works for you and you're happy and it taste good to you is all that matters 😆 I didn't have to add a lot of oil because my wok is seasoned really well. Through the years it's built up a layer of built in oil 😁 So if your wok or pan is not seasoned well you may have to add a bit more oil. Great explanation over halving the dish to cook but please advise how do you keep the 1st dinner hot to serve when the 2nd has just been cooked? So that you can the eat together with your partner or other guests if maybe 3 of you.

Hi how are you? Great question so a little bit of preplanning helps. Let’s say you’re only cooking 2 portions. I would cook full all the shrimp first. It’s not uncommon in restaurant industry to par cook ingredients when they know it’s a popular item just to speed up orders. When you cook the noodles just portion the shrimp out. Also when you cook the second portion I don’t think the first portion will cool down significantly. Worse comes to worse everyone draw straws to see who eats first 😆 Thank you so much for watching g and commenting 🙏

same concept for fried rice or cooking anything in the home sized wok. Can't crowd it or the ingredients will steam and not sear...so lose whatever wok hei we try to generate....nice job Wally.....

The thing with this dish is after you made it, you realize you still have almost a whole head of napa cabbage left and a whole bag of bean sprouts left because they don't sell cabbage and bean sprouts by the cups.

Hello! I buy my produce at a local wet/dry market. They sell small cabbages and small portions of bean sprouts. Whatever I have leftover I used it to make a beef lo mein video afterwards. And what I had lever over from that my wife made a Thai soup. If there's an Asian supermarket or grocery shop near you I think they should be able to sell you small portions of bean sprouts as well. When I was still living in NYC the Chinese stores sold that way too. Other than that, perhaps just make a bunch of lo mein noodles, stick them in your fridge and you've got a few days worth of food 😁 Thanks for watching and commenting, take care!

Hello! I don't have anything against MSG, I do use it but depends on what I'm cooking. My recipes are based on the foods I ate while growing up and eating around NYC's Chinatown. There's a restaurant that had mostly Chinese customers and they made delicious lo mein but no MSG. Good luck with your cafe business, I had one before in Bangkok and it was quite a lot of work 😂

Hello! No not a superstition 😆 I just left it in to see how much it would shrink. But for some reason that shrimp didn't shrink at all 😂

Hello Regina 😀 For Chinese food, whether in restaurants or homes, peanut oil, corn oil, canola oil, vegetable oils are used. That said, it's best to use oils that don't have flavors such as olive oil. In my future videos I'll try to remember to say what oils I'm using 😆
