This reminds me of one year in the dead of Canadian winter when I was following a deer trail through the woods and ran out of daylight and had to camp with no tent or sleeping bag. I built a fire and heated rocks and buried them and covered them with sand and tree boughs to keep me warm....13 hrs in the cold feeding the fire with wolves closer than I thought they were. It was beautiful!

Awesome Simon and Merry Christmas. You know once upon a time every other person in New Zealand had an Uncle or a mate who worked on the Railways (or so it seemed). Railway iron is often used in hangis instead of stones. Saves on all that dangerous exploding stuff. I would figure any heavy iron or other metal would do the job in place of those stones. Oh, and next time pop a bit of pumpkin and a sweet potatoe or two in. - Ben.

Native Americans would dig a side hole and tunnel into the main fire pit, so that fresh air would draw in from the bottom. I've just gotten started watching this (I'm at 5:33), and I'm fascinated.

The Dakota Fire Pit might help the need for RAGING heat, much better oxygen supply than fanning. Huge effort, bringing in your own rocks and breakfast sausage skillet…not to mention a Christmas meal, WOW. Hawaiians stack the rocks into a wall around the outer edges of the hole, placing the food in the center. Then they collapse the stones when they bury their pig and veggies. Thank you, Simon, from an old vet, retired in the US, hills of east Tennessee…finally. Merry Christmas and Happy New Year 🎊 🎉✨😄. This Christmas meal looks delicious!!!

Thanks for sharing your adventures, Simon! I really enjoy virtually escaping through your videos. Someday I hope to be intrepid enough to go camping, cooking and boating in winter. I was recently by a river in Massachusetts and it was killing me to not be on it kayaking, but it was just way too cold. Then it froze over! :D Thank you for the inspiring videos and for your cheerful disposition. Maggie is adorable; I wish I could hug her! Cheers! :)

Yes the Maori have used the Hangi in New Zealand for years. Phonetically speaking it’s pronounced “Hungee” not Hangee. And it is the food of the gods. Beautiful succulent meat best vegetables best everything in my opinion. Kia Kaha Simon meaning Stay Strong. Thanks for the videos I love them they are well put together and informative. Simon, in Texas USA there is a fish called a Carp. Special Texas cooking instructions are this...do a fire, wrap Carp in mud. Cook on the open fire. When done remove mud...throw away the Carp and eat the mud! May your feet on the trail be sure, your fire warm at night and the trail tales be true!

In the UK carp fishing is a big thing. Lakes are stocked with carp, a 45lb carp can cost the fishery owner over £5000. People pay to fish for them and if they catch them they are handled like a baby and released.

Started watching your series a few weeks ago while I was undergoing treatment for cancer at St James hospital in Leeds. It as helped me through a very dark time ,so I thank you very much. Just one complaint I have to make is about the food ! I have throat cancer and can barely swallow so I have been eating soup for weeks and watching you make some very good food on an open fire as been torture ! Keep up the good work you have made me very happy.

I had to really laugh hard! Even after eating, Maggie still was ready for more grub, just like our own two beloved pooches. Sumptuous bush-meal and great video. Happy Christmas to you & yours, and hang in there safely until that vaccine is more widely available. Best regards.

My father would have said 'that's not burnt, It's like a mahogany Queen Anne table.' I loved Maggie's tinsel collar and your snow bunny Christmas hat. She is one of the most beautiful dogs I have seen. Excellent manners too. Years ago, when I was in my teens, we did a luau and it was fabulous! I'm going to have to try and make one of those once the ground thaws out. We have a blizzard raging outside right now. Winds gusting up to 60 miles an hour. Can hear branches cracking. Tomorrow and next year will be better! Happy holidays to everybody! And stay healthy please!

Introducing my 85 year old mum to the joys of KZbin we came across this, delighted us both and reminded us of our Christmases in the Caribbean when she taught at Ross School of Medicine in Dominica, the first year she was there we tried pit roasting a (whole) turkey and then proceeded to do so the every other Christmas we spent in Dominica for the 20 odd years she taught there. Used to wrap the turkey in banana leaves and 2nd or 3rd time round built a cradle out of wire coat hangers to get the turkey in and out of our pit. Great video that brought back some even better memories. Thanks from us both.

Simon, we did something like this at summer camp. We would line a hole with the stones and built the fire in the lined hole. We could then rake the fire out and then line the hole with wet grass, above and below the food. We put a chicken, vegetables, etc in a pillow case. More wet grass and then cover with dirt. That way when you’re leading a group of adult leaders through the woods, you could remark that you were a little hungry, and then dig up dinner. Great video.

Out of all the uncertainty, anxiety, suffering (for many, sadly), and generally life-altering tire fire of a year that was 2020, the one highlight and takeaway for me is now referring to brussels sprouts as "fart bombs" 🤣🤣 👍! This was totally coolio! I had never heard of "Hangi" before, had to look that up. I've done many clam boils on the beach before, I thought this would be similar, but its not. We used to call this a wart pit because the sides are vertical and the pit base is deep. The fire struggled a bit for lack of air flow and you covered the top with wet burlap over sticks to create an actual oven chamber. The food was applied directly on top of the hot rocks. In a clam boil, the pit is much bigger and rounder with shallow, sloping sides because its generally done on a sandy beach. The pit is fully lined with rocks first and the fire rages above the rim of the pit to heat the rocks. You can use a pitchfork to rattle the rocks around to let the embers fall down between them if you want, but removing them would be a lost resource and would burn bare feet. Wet seaweed is then loaded in directly all over on top of the hot rocks and embers and then layered with the food but only in the middle. The food pile and the edge of rocks on the rim are covered in more seaweed. The food is arranged and layered in the boil in a cook time logic based on the food type. Usually a few carrots are placed loose in the top of the boil to serve as a thermometer. The whole pile is covered with more seaweed and wet burlap. The boil just steams away while you drink too much! :-) This was an actual oven! You totally rocked my mind! Totally cool!

Brings back memories of how my Dad would put a hangi on for News Years Eve and all the Whanau showed up for it. Was a Railways man and would start up that fire to heat up those irons at daybreak while mum and I peeled a ton of spuds. Was always a late feed still but so worth it.

Fantastic! My late father in law was a scout leader in the Peak District and he once cooked a full turkey dinner for the whole scout troup in a similar manner but using a haybox I think. Well done you!

When I was a Boy Cub, we Camped on a Hillside in Devon on the edge of some Woods, we dug into the Hillside leaving an edge to prop up a used (and cleaned out) 5 litre metal oil can, which we made into an Oven. That was then covered with the Turf we had removed leaving a Chimney gap behind. We then had a fire under the oil can which drew up the back and out. If remember correctly I think we Baked a simple Bread. It was probably close to 40 years ago now, but I remember the Oven and have always thought it was awesome to use your surroundings to make a cook system. Thanks again for the content Si. Years ago we ran a Scout camp next to a river same as above we used the river bank but as the fires got going it dried out the mud which had a high content of sand ,not good, as they collapsed except one patrols oven as the lad tasked to make it mixed cow pats with the mud and it lasted all week!, memories 😊😊 Thanks Simon for your hard work putting these enjoyable video's together. Hi Simon. One trick to reduce burning is to coat all faces of the food with cooking oil and place one pan inside another but with pebbles between them to create hot air (like our home oven ?) rather than direct pan contact with the heat source... Great stuff as always. Cheers Si

Simon, to get fire raging, dig 2nd hole just as deep, then a horizontal connecting bore. Air gets sucked into the bottom, then when hot enough, plug the bore.

👍👍👍. Back in the 70's I had plenty 'underground' meals .. 2000+ metres below surface 😏. Saturday morning fry-ups were a regular, using a shovel to cook in and the orange-coloured 'marking (wax) chalk' as the heat source 😊. On a more serious note .. Now that was very, very nice .. have done similar with the scoff wrapped in foil. Thanks for sharing and bringing back the memories 👍. Simple Fare .. looked delicious .. and food always tastes better cooked and eaten in the outdoors. HAPPY CHRISTMAS SIMON!!!!! AND TO YOU TOO QUEEN MAGGIE!! Absolutely delicious looking. If I close my eyes and I wander in my memories I can smell the fire, food, and dampness. I can feel the wind, moisture, and the squish of mud under my boots. The taste of the hot food slowly cooling as I eat - all is GOOD (except for the sprouts mate - sorry - but oh the rest is heavenly) Then reality breaks back in and I want to thank you for your videos this year and the whole year of entertainment. I have enjoyed 'our' hikes, paddles, and camps together. And thanks for always doing the hard stuff so I can sit and watch the master at work. ATB Simon🎄🎅🏽🥘🍴🔥⛺

Bloody hell Simon I was only going to watch a few minutes of this on this Christmas afternoon instead of the telly or playing a game with the family. However, you got me mesmerised and I couldn’t turn off. You are one amazing person Simon with so much talent. I truly believe that before we are born God gives out talent and ability but he get fed up and dishes load out willy nilly and then finds he has to economise and so people like me are given virtually nothing! The food looked amazing and Maggie certainly enjoyed it. The problem of cooking outdoors is that once it’s ready it has to be eaten fast so as not to go cold. Many is the breakfasts that I’ve cook out in the mountains that are stone cold before the last sausage has been scoffed. All that being said your food certainly made my mouth water. Kath is about to dish up the Christmas dinner, it had better be up to your standards is all I’ll say. Cheers Mike. PS I’ve listed several of your videos for watching later. 👍

Thanks for sharing this Simon, I think I read a slightly different variation on this many years ago in Lofty Wiesmans SAS book where fresh green foliage, grass, leaves etc is placed on top of the red hot stones then the food and then more foliage. Now if I remember this right, it was about 30 years ago. He left a stick going down over the food parcel and started to bury it, next he gave the stick a wiggle to make a hole and poured water down the hole to produce his steam then sealed the hole.

When cooking meats and veggies over a heat source you can’t regulate well always put a layer of sacrificial onions on the bottom. The moisture will keep everything above from burning on the bottom. If you like onion great, if not not much waste. Merry Christmas and thanks for another great video.

Well, there is only one way to have a hangi in weather like this and that is....a raised garden bed. You could make it quite a science. Something in the order of collapsible rocket stoves. Just think, a full set complete with lava stones! Still thinking about the soil bit, though. Got any ideas?

God bless you Simon and Mags, you've been an absolute inspiration this year to myself and a couple of other Scout leaders going stir crazy during these strange times. We've wild camped as much as we could, trying as many different way's of cooking, fire pit after Christmas me thinks now! Have a very merry Christmas🎄

Awesome video, the nature look quite similar here in North Sweden there, are you waiting for snow? Nice hat, massa we called it in Sweden. Christmas food cook outdoor especially underground is challenging. What's the temperature there today? Our ground are frozen, so it is difficult to dig hole.

I know I’m late to the party Simon, but I was shown how to build and use a hangi on possibly the last “combat survival and resistance to interrogation Instructor course” that he taught at Hereford in 1985 (I think he retired the next year). It’s a great way of cooking if done properly - we cooked a whole sheep that we prepped from live to food.

kia ora from new zealand!! we use a type of volcanic rock called andesite in our hangis. these rocks hold a significant amount of heat for a good amount of time and do not explode in the fire. they do require quite a lot of wood to heat them though depending on the amount of stones you are using which would depend on the amount of food being cooked. having the fire in the hole is a good move as it dries out the surrounding soil before cooking, otherwise the wet soil would drain some of the heat during the cooking. having said all that i did enjoy watching it being done differently and im glad it turned out well for you, job well done!!
