Moroccan Pastilla is a little harder to make but glad he made it easier for those who just cant bother with the hundred of different spices we put in it lol! Of course every spice makes it different and unique that when you taste Moroccan Patilla you love it but you just can't tell what's in it. Glad I'm seeing more Moroccan stuff here. :)

This is very authentic except that we assemble it in layers. We cook the chicken with the onions, we remove them, we keep the sauce and then add the eggs to that sauce, we boil the almonds and grind them with sugar, butter and orange blossom, then it is a sheet of pastilla, a layer of chicken, another pastry sheet, a layer of eggs, another sheet, the final layer of almonds and then we cover the whole thing. When you slice you can see the different layers, it is so so good.

@@moment8505there are just 3 small things you could complain about. And 2 of those are just to make it easier. He could use more spices, but most people don't have saffron and ras el hanut and so on. And he could have made the filo pastry by hand, but no one actually does this anymore.

@@antipro4483 it is not about spices or filo, he did not respect the recipe, after you cook chicken with onions and spices, you take the chicken away from the pot and add eggs to the onion sauce, and stir it until it is dry. For almonds it's important to toast it or fry it and mix it with a bit of sugar and cinnamon, this missed technique boost the dish to the next level, you can use filo ofc and whatever spices you want since it's not hot spices. golden Ramsay recipe is just a mush it lack technique, texture, and flavor.

As an American, I looked up and tried the authentic recipe today. It took me 3 and half hours to make, and while the end result is good, it's still not nearly as good as when experienced Moroccan cooks made it for me. Nothing can beat that, so I think this recipe seems more up my alley!

Pastilla is... a truly mouth watering dish. Succulent. For a more traditional approach: cook chicken till one can pull apart with two forks.
