Moroccan Pastilla is a little harder to make but glad he made it easier for those who just cant bother with the hundred of different spices we put in it lol! Of course every spice makes it different and unique that when you taste Moroccan Patilla you love it but you just can't tell what's in it. Glad I'm seeing more Moroccan stuff here. :)

I just made this for myself and my housemates and it was absolutely delicious. First 'family dinner' we've had in a long time and I think this dish just re-introduced the tradition. Such a great recipe.

This is very authentic except that we assemble it in layers. We cook the chicken with the onions, we remove them, we keep the sauce and then add the eggs to that sauce, we boil the almonds and grind them with sugar, butter and orange blossom, then it is a sheet of pastilla, a layer of chicken, another pastry sheet, a layer of eggs, another sheet, the final layer of almonds and then we cover the whole thing. When you slice you can see the different layers, it is so so good.

I was about to start a cooking channel or a blog, but I don't have the right equipment and the right lighting, after I decided on the blog and started writing my recipes I got employed and I didn't have enough time, either I do something with high quality that needs all my time and focus or I don't :D

Do you originally make it in a tagine? I went to Morocco for my honeymoon a year ago and of course came home with a tagine but i have a hard time putting it to good use.

thats exactly how grandma used to do it but instead of shaved almonds we used to grind it into small pieces childhood memories from a half Moroccan viewer :)

Definition of a chef "the chief cook, especially in a restaurant or hotel, usually responsible for planning menus, ordering foodstuffs, overseeing food preparation, and supervising the kitchen staff." he does not work in a restaurant therefore he isn't a chef.

​@@moment8505there are just 3 small things you could complain about. And 2 of those are just to make it easier. He could use more spices, but most people don't have saffron and ras el hanut and so on. And he could have made the filo pastry by hand, but no one actually does this anymore.

@@antipro4483 it is not about spices or filo, he did not respect the recipe, after you cook chicken with onions and spices, you take the chicken away from the pot and add eggs to the onion sauce, and stir it until it is dry. For almonds it's important to toast it or fry it and mix it with a bit of sugar and cinnamon, this missed technique boost the dish to the next level, you can use filo ofc and whatever spices you want since it's not hot spices. golden Ramsay recipe is just a mush it lack technique, texture, and flavor.

@@moment8505 i agree with the taking the chicken away and adding it later. But the almond step isn't really necessary in my opinion. If you add the right spices in the first place, toasting the almonds with spices won't make much difference. The mostly add texture and the nutty flavour

weeell , although this is not the reaaal recipe, a lot is missing, the way the chicken is made is different and there's a sweet necessary almond paste layer , I'm proud that Gordon reproduced a moroccan dish .

Well thank you Chef for putting efforts in this and promoting Moroccan Cuisine. This is actually a very simple and simple way to make a chicken pastilla. The original recipe is way more complicated and needs more ingredients. Still... Way to go!

As an American, I looked up and tried the authentic recipe today. It took me 3 and half hours to make, and while the end result is good, it's still not nearly as good as when experienced Moroccan cooks made it for me. Nothing can beat that, so I think this recipe seems more up my alley!

I made filo pastry from scratch on Saturday morning. I fought through the weekend hard to conquer this recipe.. I succeeded and got a full 10/10 from my wife... Not for the Pastilla though (another story!!).. We are both exhausted and need some sustenance... KFC?

The best restaurant dish I ever had was a pigeon pie in Morocco. This is IT, I believe! The savory AND sweet of this recipe are surprising and delectable. Can't wait to try this at home--with a nice, cold, Riesling wine.

As a moroccan , its not really a pastilla , the chicken isnt cooked like that and a lot of stuff is missing but im glad that gordon tried

Chef. Sweet almond paste is a must in the chicken Morrocan pastilla + the chicken should be chopped thinner... Nice try though 😉

Pastilla is... a truly mouth watering dish. Succulent. For a more traditional approach: cook chicken till one can pull apart with two forks.
You have to try this Moroccan chicken pie (Pastilla)!
