Lovely video! Just want to support “the quality of life that our meat has” idea! 100% agree! Im in the medical field and the info i have of how the chicken meat stays white and the beef stays red in the supermarket fridge is 🤢 gross 🤮. Not to speak of the bread recycling accreditation that i recently learned about! People must go back to raising their own meat growing their own veggies and baking their own bread!

I do this with chicken bones, too. I crack the long bones with pliers so the marrow becomes part of the stock, or, if cooked longer, the bone broth. The fat which rises when cooling the stock/broth is smoltz (clarified chicjen fat) & is THE best thing for frying eggs, etc. Thanks for your video!

Great video especially on the "personalities". It makes a huge difference in all aspects in all farm animals... When we harvest our rabbits we take the legs and the tenderloins and can them for us.. Boil the bones for bone broth and remove the meat for our dogs. I make rice in the broth to add to our dogs food. The chickens get the rest..

I always add chicken feet to any of my bone stocks because I love the increased collagen 😊 meat Jell-O. The feet don't see to add a taste to me, especially if I am making a brown stock with roasted bones. (white stock is unroasted bones. White stock good for upset stomachs, and sick ppl to not overwhelm a stressed system but still give nutrients.)

Beautiful golden congealed broth. I was the same way using a pressure cooker but got used to it which made it easier to pressure can foods in my pressure canner. I recently added to my pantry shelf bone-in rabbit that created a beautiful broth without adding water. I may dehydrate the broth when I drain each jar.

contact the local 4H or FFA to buy some rabbits. They will be happy to sell you rabbits and be able to answer all of your questions. I fully support your wish to get back to the quality of life for our "meat". I am really interesting in sustanable agriculture. An animal raised in fresh air and sun with natural forage is much healthier than an animal raised in a very epensive enclosed barn standing on its own excreta. I do this because I love animals, but I also see the result in human health resulting from these unatural technicques.

I'm just now wanting to get into rabbits for my kiddos for 4H and for meat. So glad your making videos like this!!! I also am curious. When you cook and eat your rabbits do you notice a problem with alot of small bones getting into your meat? My mother in law said she has this problem and I'm curious if this is common, if she did something wrong, or if there's a way around this.
@TealStoneHomestead2 жыл бұрын
Rabbits for 4-H are so much fun 😊 rabbits have teeny tiny bones. It’s inevitable that I will miss at least one or two with the meals I make. The problem area for me is the rib cage. So yes, it’s common to miss a couple. Just gotta have an eagle eye! Lol

I've been watching your channel and feel like you're a good one to ask this question. Do you think, at 59, its a bit late to get into rabbits for show, meat, fur, etc. I started to get into rabbits more than 25 years ago and various life circumstances interrupted that endeavor. I'm interested in trying now but since I don't have all the experience you have, I'm unsure if its more than I might be up to. What are your thoughts?

This is one of the things I'm looking forward to most once we are able to start butchering! And I love my instant pot for bone broth. So easy! Great video. :) Just out of curiosity, do you use your quail for meat at all. If so, do you ever use quail feet for bone broth? I know they are so tiny, lol, and would have to use quite a few but just curious if that would work too.
@TealStoneHomestead2 жыл бұрын
We do use our quail for meat! But I haven’t attempted using their feet (I probably should!). I actually just made our first batch of quail bone broth the other day, but it didn’t gel and I wasn’t fond of the taste. Gonna have to keep experimenting with that one 😊

....so I use the boiling of the bones, like before: you used to make the pot hot - then eat it - and since there was a lot in the pot - you let it cool down and made it hot again the next day and ate it. I call this interval cooking: the cooling ensures that what is stored and bound in the bones is released - these include minerals, trace elements and vitamins. If you do interval cooking - nothing big is visible at first - for example with poultry: fat eyes form on the top of the broth - nothing else when it is cold. After the second cooking interval you already have fat (!!!) on top of the broth that separates. and when you do the third interval cooking, it always has to be heated up and cooled down - you even have gelled stuff in the otherwise lean chicken broth - in addition to fat. It is different for each animal species, how and what is expressed - in what condition! Do you have fatty meat or meat with a lot of fat, like goat meat? The not so popular thing because people eat low fat here in Germany - although this fat contains valuable things - namely the minerals, trace elements and vitamins that are needed - the fat changes when cooking: it no longer has the same effect as fat - that is It sticks to the palate and is disgusting, but you can eat it normally! Then you immediately have fat on top of the cooled broth if the meat contains a lot of fat! You can cook goat meat in a jar, similar to canning: you can clearly see how the gelatin is deposited at the bottom and the fat at the top! The recipes are the same - whether you make goat sausage, smoke it or simply boil it down! People generally add fat to sausage: why should it be pork fat when you cook down rabbit meat? By cooking at intervals you get more fat: I never knew before that lean rabbits contained fat - and certainly not that much With interval cooking you get everything! You don't need a pressure cooker - a normal cooking pot is sufficient - but with a tight-fitting lid! just put it on: the pressure lifts the lid and allows moisture to pass through moderately. Kind regards from Berlin, Germany

So funny thing about bone broth, well any time I make broth of any kind, I get so nervous about straining the broth out because of all the horror stories of people unintentionally dumping their broth down the drain while straining it!! All the time and energy put into making it and one false move wastes it all!
