Simple Sides - How to Make Marinated Carrots

Marinated Carrots
2 lbs carrots(5-6 cups)
3/4 c vinegar
1/2 c oil
1 cup sugar
1 can undiluted tomato bisque soup
1 pepper chopped
1 onion chopped
1 tsp. Worcestershire sauce
1 tsp. mustard
1 tsp. pepper
Boil carrots till tender (baby carrots or regular carrots cut in coins)
Mix the rest of the ingredients and boil for about 5-10 minutes
Pour sauce over carrots, cover and refrigerated overnight.
Serve hot or cold. I like them cold

I love that you still have your mother’s hand written recipe card. I have several of my mother’s recipes also. I hope one day my daughter and grand daughter will cherish them as much as I do. Yes, my daughter has her recipes, but not written in her handwriting like I do. It’s such a special thing for me, and brings back so many memories of her.

Hi Donna if we like veggies like most of us too. Carrots are one of favorites,and marinated sounds good. It also is good accompanied with a sandwich. Probably good cold as appetizer.So nice to use your moms recipe. They look good. Thanks Donna. You’re right we can enjoy carrots as an additional kick to that hard carrot we try to munch.👍👍🌹🌹❤️❤️😎😎

That is a very interesting recipe. I’ve made marinated carrots before with just the vinegar but never with the tomato bisque soup. I will give it a try. I have tomato bisque soup and carrots that I need to use. Thanks for the simple side idea.

Love your presentation! I had a marinated carrot recipe that I can no longer locate. Yours sounds very close to mine, as much as I can remember that is! Have everything except for the can of tomato soup, And will pick that up tomorrow to try your recipe tomorrow evening. Okay so 🤣 I made your cream corn cornbread casserole! I liked it, but didn't love it like I thought I would! 😭 I love all of the ingredients of course, so that made me think I would love it. I think what threw me off was the whole corn and the texture. Now, is it supposed to be a little wetter than moist when it's done, or is it supposed to be cornbread like? I had a friend help me and she said it's supposed to be pretty moist, almost like bread pudding I think. Anyway she loved it and of course she has had it before. Sorry this is so long! I appreciate any feedback you have! It sure was beautiful and smelled amazing coming out of the oven! I made it for Easter Dinner 😁 Now my husband loves candied carrots so I think I'm definitely going to make these marinated carrots, I just don't know when, because of how shopping is right now :) $2.99 a can, and the only one, kind of shopping ha ha, anyway take care, God Bless

It is more moist than cornbread. It will hold it's shape but you eat it with a fork not by picking it up. Some call it corn pudding.
