The Pita bread doesn't inflate magically like this unless you explain what is the right heat for it. Most videos skip to provide the most important information which is what is the right heat and this wastes time, energy, and patience.

Tried this recipe today. I used the same amount of ingredients. I was able to make 6 pita breads out of 8. I burned two. The lessons I learned: the pan has to be very hot at around 500F; the bread needs to be flipped over every 20-30 seconds. The outcome is the softest and wonderful tasting breads. Must have been what I got wrong too then. I tried this recipe out last week using half of all the ingredients in case I went wrong, and not one of mine puffed up. I instead made 4 very flat, very crunchy, non-puffed pittas. Fail. I binned the remainder of the dough 😕

Hi, a friend of mine asked if I knew how to make pita pockets, I said I would look for a recipe. I found yours, and I found out I already know how to make pita. I was raised in a Mexican family, and we call these gorditas de harina. I looked at other recipes and found out that different cultures use the same recipe, some with added ingredients. @@is15land Your pan is not hot enough...when that voice in your head tells you "it's gonna burn" - crank it up even more...these type of breads are usually cooked/baked in tandoor ovens which are man made cylindrical shaped caves going into the ground with a circular opening at the top through which the bread is lowered and stuck against the clay/stone wall. The temperature is usually around 500 degrees where as our average stoves deliver about 300-400 degree heat at the medium setting. Make sure to flip as soon as it poofs up (should take about 4 seconds from when it hits the pan)...Enjoy!

I was dubious, but these turned out a treat. Pan must be as hot as you can get it, then the puff happens like magic. Roll out to 15cm diameter worked for me (I used a saucer as a guide) and flip reasonably quickly on the first turn. Thanks very much

I love ❤️ this recipe. This is my 2nd time using it and my pita bread is so perfect and delicious. Ok so the first time I made it my 1st 2 pitas didn’t puff up and were kinda burnt. I used a medium size cast iron skillet. Of course I read most of the comments 1st for tips and details. Anyway initially I cook for 30sec then flip. I do both sides. Then I cook for 25sec then flip both sides (this is when it puffs up for me) then I end with between 11-15sec to finish (both sides). Did I mention how I love ❤️ this recipe! Thank you for posting!!!

I just tried it this evening, tastes good! The 20min and 15min settling time was cut by 50% and I think that resulted in my flatbread not rising to a puffy bubble while in the pan like yours did.

@@clearandbright2685 You replace yeast with an equal amount of baking powder. It causes baked goods to rise rapidly, but not to the same extent as yeast. Other substitutes are beaten white eggs or Sourdough starter or baking soda and lemon juice.

I made this with Gluten-Free Spelt Flour. I noticed that the pan had to be quite hot for it to rise. Some flatbread's rose, some didn't: I relate this to how the dough is being worked, so in this case if you use Spelt flour you've got to be careful with this since it can influence the final result. However, I didn't mind. I ate this with white rice and salmon blend, very good for such a funny weather🥰 Overall the recipe is good! It tasted great also, so I definitely would recommend 😉

Thanks for the excellent recipe and well made video. Note--observations not criticism--> Ingredients: Water, flour, salt, olive oil, + butter (= 5) + garnish(optional?) (= 6). Tools: Bowl, measuring cup or scale, (sifter?), teaspoon & tablespoon measures, plastic wrap, rolling pin, (timer?) no-stick or low-stick frying pan

Just poor the boiled water over, as they show. It will steam, but that doesn't go over well on video. As you can see, they stir it with a spoon in the beginning, and not touch it untill a little later, when it's cooled down so much that it's still hot/very warm, but you can safely touch it.

This is actually same way to make roti Well. I was shocked becoz I am Indian and that's what we use for roti or chappati.. But pita bread.. Well I'm married to a middle Eastern who is a chef n Baker.. Without yeast there's no pita bread.But I guess people love it because they find it difficult to make pita bread.

@@erionj. The dough has to be kneaded until it becomes a bit springy and elastic (stretchy). Otherwise the flour particles won't bind well with the water/oil and the bread won't rise. It's always better to knead more than you think you should. You will easily see and feel the difference in texture from when you first started kneading it to when it's ready to be cut/rolled out.

This type of bread can be made without salt. Salt "brightens" the flavor but it could be sprinkled on top or dispensed with entirely if you are on a salt-free diet. Flour, water and olive oil are the three necessary ingredients. Hot air inside the bread is what makes this bread rise.
