Hare Krishna,
This simple cake made from grated tapioca (cassava) and baked until the top and sides are crispy brown, which is actually the best part of this cake.
Inside it is soft and chewy and together it makes a great texture. This is one of the many Asian delicacies and it goes well along with your hot beverages.
4 Cups - Grated Tapioca
1 Cup - Caster Sugar
120ml - Thick Coconut Milk
20ml - Melted Butter or Oil
1 tbsp - Tapioca flour or Potato Starch or Corn Flour
1/2 tsp - Pandan Essence or any other Essence.
1 tbsp - Custard Powder - *Optional
*If you are using this recipe for fasting days like Ekadasi or Navratri please substitute the custard powder with another 1 tbsp of 1 tbsp tapioca flour or Potato Starch or Corn Flour.
7-inch square baking tray
Bake in a preheated oven at 180°C for about 45 minutes until golden brown.
