I think the Soul of Cinder fights you because either way you're getting burned to fuel the fire. If you want to be the Lord of an age you have to prove yourself. Estus isn't necessarily for undead is it? Undead use it but its taken from the fire which the gods controlled. It could be that its something the gods made for themselves and repurposed it for the undead.
