Sindhi Kadhi Ingredients
Preparation Time 10 mins
Cooking Time 1.5 hour
Serves 5
Aloo 2 Medium
Baingan 3 Small
Bhindi 10
Guvar /Cluster Beans 10
Gobi 8 Florets
Oil 1/4 Cup
Methi Seeds 1tsp
Jeera 1.5 tsp
Besan 4 tbsp
Red chilli 1.5 tsp
Water 1 Litre
Imli pulp 3tbsp
Curry leaves 10
Green Chilli 2
Tomatoes 2 Medium
Salt to taste
Haldi 1tsp
Ginger 1/2 Inch
Steps
➡️ Shallow fry bhindi & Baingan with pinch of salt and keep aside.
➡️ Heat oil in a heavy bottom pot. Add methi seeds and jeera. Saute for 30 seconds and add besan.
➡️ Cook the besan on low flame for 10-12 mins and keep stirring continuously until you get nice aroma and color turns dark golden brown.
➡️ Add red chilli give a quick mix and immediately Add water.
➡️ Add curry leaves, chilli, Tomato, haldi, salt, ginger, aloo guvar and Gobi.
➡️ Boil the kadhi for 40 mins then add Imli pulp and bhindi and Baingan.
➡️ Boil for another 10-15 mins mins. Add Tadka of ghee and Kashmiri Red Chilli and add fresh Coriander leaves.
➡️ Enjoy this Sindhi Kadhi with rice, boondi & papad.
