So, while you're beading (forgive me if this is a stupid question) you only use one string to bead. Correct? You didn't tie the ends together, so it looks like 2 strings. (If that makes sense)

Yep, that's correct. One string that's not tied so the beads can go around the needle

Yes, There is also the option of double needle flat stitching But, if you’re lost- what you can do is tie a knot at the very end of your threat before you put on beads, essentially, tie a knot, thread the needle through your fabric, I recommend leaving a tail from the knot to prevent unraveling and weaving it in later, after your needle has gone through then lay your beads on
