SINIGANG NA BANGUS SA MISO or MILKFISH IN TAMARIND-MISO SOUP is a dish that has a distinctive sour taste coming from tamarind and miso. Miso is the ultimate reference point for the flavor sensation known as "umami" It's a thick paste that is deeply savory, with toasty, funky salty-sweet richness. It has the texture on every sip that makes the dish exceptional. One of our family's ultimate comfort dishes that are perfect with a dipping sauce (combination of patis, kalamansi, and sili) as an appetizer. Please do try this dish and I promise you won't regret it!
Here are the ingredients:
1 piece milkfish/bangus
salt to taste
1/2 cup all-purpose flour
cooking oil for frying
2 pieces large onion, chopped
3 pieces ripe tomatoes, chopped
1 piece miso, (80 grams)
2-liters water
1 pack tamarind mix, original (44grams)
1/8 cup fish sauce, adjust accordingly
1 piece labanos
7 pieces okra
3 pieces chili fingers
3 bundle of mustasa
1 tsp ajinomoto umami, optional only!
NOTES:
📝Dredging the milkfish in flour will prevent the oil from splattering.
📝Adding ajinomoto especially to a soury soup dish will deepens its flavor. Leave it out if you don't want it.
📝To avoid over-salted food. Gradually adding the ingredients and season it with a light hand is better than putting all at once.
📝 This dish serves 5-6 persons
