You get a better brown and a richer fond if you use some oil with the mushrooms, or butter if you wish. Also, I always flour my chicken veal parts in a sealed Tupperware container instead of a plastic bag because it coats better faster, and you’re not wasting a bag. There’s no reason to wind up in landfill hell because you have a great recipe for chicken marsala!

If you keep a bowl of water nearby and wet the blade of your knife before/during mincing garlic it'll help keep it from sticking to the blade so much. Something my old chef taught me.

I think you were the first one I watched who put the pasta in the pan to finish cooking with all the sauce. What a life changing moment for me. It makes all the difference in how good the pasta tastes. That and your cooking method is simple. Prep, salt, pepper, butter, onions &/or garlic, and whatever else suits my fancy at the moment. 2 pan cooking: 1 for the sauce/main and 1 to par cook the pasta. PS - I’m with your son about prosciutto - a little bit goes a long way. I’ll take bacon over prosciutto thank you …. Something new I learned from this video, coat the cooked chicken in flour to thicken the sauce. Easy peasy. No sludge, no lumps.

Thanks! The dredged chicken normally has enough flour on it to help thicken the sauce, but the leftover flour is good to use since it needs to be discarded anyway. In the print recipe I mentioned that one could use a bit of cream if they want a creamier sauce. But I think this sauce is pretty good without it.

Chicken/veal marsala is usually my first choice when I go out for good Italian. I don't recall there being prosciutto in what I've eaten and like James I don't think I want there to be because of the salt. I do like prosciutto but need to be very cognizant of sodium because of kidney disease so enjoy it only rarely.

I made your chicken, spinach, and two cheese pasta dish the other night, and added a cut up block of cream cheese to it, at the beginning, and used mozzarella and parmesan cheeses. Just before adding the pasta, I added heavy cream. It was absolutely delicious! The addition of the cream cheese, added a creaminess and richness that I loved. I used 1 1/2 lbs of rotini pasta, so we had a lot of leftovers, I was able to give to a friend, who hasn't been well and her husband; and a container to my daughter and son in-law. I'm going to try this recipe next.

We just finished eating this - and we’re stuffed to the gills! We could not stop eating, it was so delicious. I modified the recipe ever so slightly by adding a little citric acid to the sauce. What a marvelous recipe, present by you so concisely. We paired with a great Pinot Noir, and enjoyed a heavenly meal. Thank you!

I love Marsala and this looks like a great recipe. Similar to the one I make but I don't put in prosciutto. I might go with James on this one. I think prosciutto has it's places, but I often find it too salty in pasta's and sauces. It is more of an appetizer for me with fresh mozzarella. The only time I use it in a meal is with something like chicken saltimbocca.

This dish looks beautiful! I have made chicken Marsala many times over the years, but I never thought of doing it like this with the chicken cut into bite-sized pieces and combining it with the pasta in one pan for the finished dish. I usually serve mine over rice. This will be my go-to method from now on. The addition of prosciutto is an interesting touch. When I add prosciutto to a dish like this, I stack the slices, roll them up jellyroll style, and do a shiffonade. I still have to unroll the cut pieces before I add them to the pan to brown them. Either method still involves a bit of work. But it's worth it. I love your channel, and I'm finding so many great recipes here. Thanks for sharing.

I do like using my chef's knife for 90% of the cutting I do. Sure split that chicken breast easily the knife must be very sharp. This looks delicious!

I have been hankering for Marsala for awhile now. This recipe came up at a very good time. The addition of prosciutto is brilliant and Pappardelli is ALWAYS an egg-celent (LOL) substitute for egg noodles! I will try this version for sure! I enjoy your your style of cooking and your relaxed presantation to cooking. I am more used to the marsala with the cutlets and mashed potato's. But I will defiantly try this with the pasta, all in one pan. I agree with Jr. Prosciutto in pasta dishes can kill it for me. HOWEVER on a sandwich with some basil and olive oil, maybe some fresh mozz, with crusty bread it is amazing.

I've done the Marsala as a pasta dish, its a really great way to enjoy the flavors of that dish. As usual, James is spot on! I saw a comment from someone below saying they didn't know what to make for dinner, so they would do this. It would be a super challenge for anyone to choose one of your dishes each night for dinner until they run out of videos!

That’s my ultimate favorite pasta. I never thought to add the prosciutto but I think I will next time. I also hit it with a bit of heavy cream. It adds a touch of luxuriousness to the dish. Oh and don’t forget the freshly grated Parmesan cheese. Great job!

With the exception of a couple of times where it was served with rice or with veggies, I have always had marsala with noodles! Then I am a noodle nutcase, so...I love it! I love that you made the chicken into medallions. I am so used to it being a big piece of chicken - this is a cool alternative. I have never added proscuitto - I tend to feel like the dish is salty enough for me but it is a creative and fun touch!

Your son is so sweet. As a kid, I hated the red calamari sauce my parents would insist on having each Christmas Eve, with a side of fried smelt my father caught on Seneca Lake. I would make buttered pasta and skip the smelts! But, now that I'm an adult I love both dishes! Tastes do change so maybe he will come around to the prosciutto!

Great idea chopping up the chicken and using papperdelle! It’s essential not to over cook the chicken it’s literally done in two minutes. I also prefer the dry marsala. However we found that we did not like the prosciutto in this dish. It was interruptive and kind of ruined the delicate wonderful Ness of the marsala sauce. Also, I agree with you and always make deviled the sauce because no matter how much you make, they still want more pasta with sauce because it is so damn delicious! You can use up to 2 pounds of mushrooms if you want, I like half Cremini have baby Bella
