INGREDIENTS:
Sirka Mirch:
* Green Chilli(हरी मिर्च) - 5-6 Pieces
* Red Chilli(लाल मिर्च) - 5-6 Pieces
* White Vinegar(सफेद सिरका) - 1/4 Cup
* Water(पानी) - Some
* Salt(नमक - Some
For Powder
* Coriander Powder(धनिया पाउडर) - 1 Spoon
* Salt(नमक) - 1/2 Spoon
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Dried Mango Powder(अमचूर पाउडर) - 1 Spoon
* Oregano(ओरिगैनो) - 1 Spoon
* Black Pepper Powder(काली मिर्च पाउडर) - 1/2 Spoon
* Cumin Seeds(जीरा) - 1 Spoon
For Nachos:
* Maize flour(मक्के का आटा) - 1 Bowl
* All-Purpose Flour/Maida(मैदा) - 1/2 Bowl
* Wheat Flour(गेहूं का आटा) - 1/2 Bowl
* Salt(नमक) - 1/2 Spoon
* Baking Soda(मीठा सोडा) - 2 Pinch
* Refined Oil(रिफाइंड तेल) - 1 Tbsp
* Yellow Food Color(येलो फ़ूड कलर) - 1 Pinch
* Oil(तलने के लिए तेल) - For Frying
For Salsa Sauce:
* Onion(प्याज) - 3 Tbsp
* Tomatoes(टमाटर) - 3-4 Tbsp
* Green chili(हरी मिर्च) - 1 Tbsp
* Green Coriander(हरा धनिया) - 2 Tbsp
* Lemon Juice(निम्बू का रस) - 1 Tbsp
* Salt(नमक) - As Per Taste
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Tbsp
* Tomato Ketchup(टोमेटो केचप) - 2 Tbsp
For Cheese Sauce:
* Butter(मक्खन) - 2 Tbsp
* Milk(दूध) - 1 Cup
* Cheese Slice(चीज़ स्लाइस) - 2 Slice
* Milk(दूध) - 1/4 Bowl
* Cornflour or Arrowroot(कॉर्नफ्लोर या अरारोट)
* Sugar Powder(चीनी पाउडर) - 1/2 Tsp
For Serving:
* Cheese Sauce(चीज़ सॉस)
* Corns(कॉर्न्स)
* Salsa Sauce(सालसा सॉस)
* Sirka Mirch(सिरका मिर्च)
* Coriander Leaves(धनिया पत्ती)
RECIPE:
For Sirka Mirch, take a bowl & put some finely chopped Green Chilli, Red Chilli, White Vinegar, Water & Salt. Mix well & keep it aside for two hours.
For Masala, take a mixer grinder & put Coriander Powder, Salt, Kashmiri Red Chilli Powder, Dried Mango Powder, Oregano, Black Pepper Powder & Cumin Seeds. Grind all & make fine powder & then take it out in a bowl.
For Salsa Sauce, take a bowl, put some finely chopped Onion, Tomatoes, Green Chilies, Coriander Leaves, Lime Juice, Salt, Kashmiri Red Chili Powder & Tomato Ketchup. Mix well & keep it in the air-tight box and then serve the Nachos Chips with Salsa sauce.
For Cheese Sauce, keep the pan for heating & put some Butter, Milk & Cheese Slices. Cook it until the cheese gets melted. Then put Cornflour Milk & some Sugar Powder. Cook well till it turns thick & then turns the flame off & take it out in a bowl. Cover it with clean wrap & keep it in the fridge for cooling down.
For Nachos, keep the pan on the flame & put some Maize Flour, All Purpose Flour/Maida & Wheat Flour in it & roast them dry for 2-3 minutes. Then turn the flame off & take out the roasted Flour on a parat, put some Salt, Baking Soda & Yellow Food Color & bind the dough by adding some water. Then cover the dough with a wet cloth & keep it aside. Then knead for a minute to smoothen again. Make medium size rotis and keep them separate. Cut the edges & give it a square shape. Now, semi-cook them on a pan. Then take 2-3 Roties together & cut the tortillas into triangular cuts to make nachos and fry them on a medium-high flame in a deep fry pan till they turn crisp. Once they are ready, take them out on tissue paper to absorb the extra oil. Sprinkle some masala on fried Nachos. Serve the Nachos with Cheese Sauce, Salsa Sauce, Sirka Mirch & corn.
