In today's video I am sharing SIX 5 ingredient meal ideas with you. These are really quick, easy and cheap meals which are perfect for mid week dinners.

MEAL INGREDIENTS:
1. OPEN TOP PIE:
Puff Pastry
Pesto
Sun dried Tomatoes
Cheese
Salad
2. SAUSAGE & FENNEL RISOTTO
Sausages
Fennel
Risotto Rice
Garlic
1000ml Veg Stock (add more if needed)
3. CHICKEN TRAY BAKE
Chicken
Potatoes
Peppers
Courgette
200ml Veg Stock
Paprika
4. CREAMY ASPARAGUS PASTA
Pasta
Garlic & Herb Soft Cheese
Asparagus
Lemon
100ml Veg stock (add more if needed)
5. BEEF BURRITO:
Beef mince
Wraps
Cheese
Fajita Mix
TO MAKE THE TOMATO SAUCE (double up to make extra to freeze)
1 onion
3 cloves garlic
1 stock cube
2 Peppers
1 can Sweet Peppers
1/2 teaspoon chilli
500ml water
(you can add any veggie you have left over, I tend to only use red or orange and not green, otherwise your sauce will turn green.. but it will still taste delicious)
6. EGG FRIED RICE
Eggs
Rice
Bacon
Peas
Soy Sauce

We love your tray bake and made it the other day with chorizo, and hallumi. We boil the potatoes for 10-15 mins first then add peppers, , choirzo and hallumi. If we're being particularly posh we add a bit of lemon zest to the potatoes before they go in the oven. SO tasty

Hi Kerry, great ideas. We are making some strange concoctions lately, trying to use what we have 😄. Remember I said we were getting our kitchen updated, well unfortunately the builders had to stop because of the lockdown. So no kitchen yet, and lots of boxes of units and appliances stacked up, but I totally understand and I'd rather everyone stay safe. We will manage. When I make burritos i mix my mince mixture with a pouch of microwave Mexican rice. makes the meat go further and adds a bit of spice.

Kerry I love your recipe ideas - they all look so simple, but really tasty. I’m definitely going to try the pasta one as I have some garlic and herb cheese left over, but with broccoli not asparagus! In the tomato sauce recipe you haven’t said how many tomatoes to add - did you mean to put tomatoes instead of sweet peppers?

The pasta dish is so yummy and works so well with so many veggies so broccoli will work perfectly :) yes sorry I missed the tomatoes out.. so I put 3 tomatoes in but u can put more in if you want to or a tin of chopped tomatoes if that’s what you have :) xxx

I'll be trying the pasta recipe. It looked tasty and easy to make. Luckily I still have a bag of pasta in my cupboard. The supermarkets where I am still don't have any in stock, along with no canned goods, no bread, no rice, no pasta sauces, very limited meat, no biscuits, no eggs, no milk, no toilet paper, no soap even chocolate is becoming sparse. And my monthly home delivery of chocolate has been put on hold. I hope things change soon as its getting difficult to make lunches and dinners. Sorry for the moan, it was good to see all your recipes. ❤

Our shops are only just starting to get back to normal now so I really hope yours do soon too.. it’s not fair when others bulk buy and don’t leave enough for everyone else :( chris went to the supermarket on Thursday and managed to get pretty much everything we needed which was amazing :) I so hopefully this will be you soon too 😘😘

Liked the inspiration, think we would experiment with the puff pastry and toppings. I felt like the risotto and chicken meats still looked raw 😬 I know you wouldn't have served it up like that but it put me off a little bit. Really liked the pasta dish, we have seen you do this before and do it often for our family- quick and easy!

The puff pastry dish is so yummy and so so versatile:) Lol no I promise the risotto isn’t raw.. it’s because there is no colour from the ingredients so it’s a pale colour meal which is probably why it looks like that but I promise you.. it’s all cooked (I always Brown the sausages off first too) that’s one of our favourite meals and even though the colour out you off I promise it’s well worth a try :) xxx

Hi Kerry, do you think the fennel seeds and onion/shallot would work in the risotto too? Also is it 100ml stock or 1000ml for the pasta? As recipe says 100ml and you said 1000ml. I think they are enchiladas, burritos as wraps with rice in, not baked in the oven 😁. Thanks for this great in the current climate Xx

Yes sure.. just chop an onion, garlic and a tin of chopped tomatoes and that will work just as well :) xxx
