Was that dark part on the back side just optical, or was it burnt, or was it just dark coloring from the [beautiful!] cast iron skillet? I ask because sometimes my lighter food comes out darker (not burnt) in the cadt iron. So I choose other pans if I want to avoid the dark color. (Perhaps my pan isn't seasoned properly!)
