That looks fabulous! I got the nastiest Skirt steak on earth at a steak house in Hong Kong during the Equestrian Olympics. It was served cold and completely raw. Obviously their understanding of sear is not mine or yourse. They also hadn't cleaned it up nicely enough so had big chunks of sinew to chew on. I sent it back and left without paying. My friend ordered a fillet but got a sirloin which was at least well cooked.

That sounds very like an unfortunate experience. Better luck next time. I’ll probably hire an interpreter, a model, and an actor the next time I go to Hong Kong just to make sure my steaks are correct.

To be fair the management at this "Argentinian Steak House" ironically are all Pilipino and the "chef" is also from the Philippines, no clue where the meat is from it tastes bland like Australian corn fed, not good. They also told me skirt-steak is the Rolls-Royce of steaks, maybe you need a Rolls-Royce of a chef to cook it. Now I'm inspired to try my own after watching your video. Serving the thing blue was a horrible mistake. If you want a good steak dinner when in Hong-Kong I suggest "Ruth's Chris steak house", never disappoints and the service is so relaxing, calming and the sides always reassuringly healthy. I'm not American but it's all very homely, the steak is always good. I shouldn't have ever tried elsewhere, my mistake. @@OneMillionBuddhas

@@equestanton1017 I appreciate you taking time to tell the tale! Yes, I have certainly come to love a good skirt steak. I’ve created a secret formula of salt and it ends up tasting like “movie theatre popcorn butter”. Emphasis on BUTTER. It’s crazy delicious. Skirt steak only costs $16 per kilo, at my local farm. I now eat skirt steak 2x a week. I enjoy it just as much as a ribeye or chuckeye. I have heard great things about Ruth Chris, but I have not had the pleasure to experience it, yet. Soon! Keep on cooking, my friend! 🥩 🍳
