Make the original and unsurpassed skordalia with a wonderful taste and aroma, ideal to perfectly accompany the cod
MATERIALS
2 medium potatoes (500 g)
3 cloves of garlic
120 gr. Olive oil
2 tbsp White vinegar (30 g)
30 gr. Water (1 Shot)
Salt
White pepper
For the Surface
1 sprig of parsley
Olives
Olive oil
Prescription Process
Pour some salt into a pot of boiling water
Put 2 potatoes cleaned and cut into pieces
Boil for 20 minutes from the time it starts boiling
Drain them in a colander
Leave them for 5 minutes until their moisture evaporates
Put 1/2 cup of olive oil (120 g) in the food processor
2 tbsp White vinegar (30 g)
3 cloves of garlic, salt, white pepper
Beat until the garlic dissolves
Add 500 gr. potatoes in the mixture
Melt them with a spoon while they are hot
Beat for 3-4 minutes until they become creamy
Adjust the density with 30 g. water (1 shot)
We continue to beat for a while
Taste and add if you want salt, vinegar or garlic
Serve the skordalia on a plate
We spread the surface evenly
Garnish with olives
Garnish with a sprig of parsley
We keep it for several days in the refrigerator, well covered
Sprinkle with a little olive oil
