I would say because he didn't use his full Daedric form, this was just a small portion of his power maybe to test the Dragonborn, Malacath is not dead. Honestly, I refuse the idea that a Daedric Prince can be defeated just like that, without relying on other ancient tools or powers like the Heart of Lorkhan or an Amulet of Kings to defeat a Daedric Prince.
