I have ALWAYS cooked chips that way. Before living in the Republic and afterwards. You cut the chips, heat the oil until it seems hot enough and then cook the buggers. Warm skyfies and Slap Chips are usually only different names for the same thing in reality depending on the cafe. But the historic difference is interesting. (Love your videos though. They are all Lekker)

Quite a lot of UK chipshops seem to serve their chips like this, I presumed it was because they were just not cooked for long enough, but as you say, it could be to make the oil last longer.
