This is fantastic. I have a Joe Jr and I find it really difficult to control the temp for low and slow. Any chance you could do this same style video with a small/brisket on the Joe Jr and I will copy it every step of the way, and I bet lots of other BBQ newbies will do the same, because we all Dream of doing a juicy brisket. But not everyone owns a massive Kamado big Joe or large Green Egg.
