Keith visited my bakery shop, we had a conversation about sour dough bread, and he complimented us all on the quality and variation of our range. It was a huge honour he made everyones day. There will never be another Keith Floyd, he really was an exceptional personality and chef.

*almost cries; this was the very first episod i'd ever seen of someone cooking on television, I didn't know those bricks were red!! I watched it on an eighteen inch CRT television. ( ithought the crock-pot thingy was a sort of grey...)

I worked at The Red Lion Inn 1993-1994 and the Ferry Boat Inn 1994-1995 in Dittisham, Devon, which is a couple of villages along the Dart from Tuckenhay where his pub was. When I was at the Red Lion I heard so many stories from the locals moaning about him. The favourite seemed to be him charging for Heinz Beans on Toast (£5.99 or something - a bargain now!). People forget that 'Floyds Inn.. Sometimes' (the Maltsters Arms) was really the beginning of the gastro pub, and people now think nothing of paying waaaay over the odds for simple food. The woman I dated most of my time in South Devon went down to the pub once with a load of friends and local woman dressed as vikings to complain his comments about him!!!! I went down there in my first few weeks and introduced myself - Shaunagh's mother worked behind the bar (and a fine woman she was) and introduced me to Keith. He really was a pioneer, in everything he did, but goodness as with most true renegades, his life was a (self confessed) mess. I never missed his show - the Stranglers music, the bon vivant, the raffishness, and most importantly front and centre, the food that always miraculously turned out wonderful. A fascinating man who I doubt ever asked for any pity.

What a great chef and character, man of my own heart, I have fond memories of my parents watching him back in the 80s. There is a chef on KZbin however, that in some ways reminds me of Keith, he's nothing like him really, he's a French/Italian retired chef who now has a channel which is absolutely fantastic. What reminds me of him is the same passion for cooking and is such a great character. Search for Chef Jean Pierre. You won't regret it, he's amazing to watch and the best teacher of cooking.

2-3 hours at 180 - need the temperature to break down the fats in the shin, the shin is the key part in the dish, please dear lord don't use silver side ;)

I make this one quite regularly. Some things I skip, like orange peel and cloves cause I'm sensitive to citrus and can't think of a place to use the actual fruit after peeling, and cloves cause... well, I don't like them. And pig feet I don't have access to. I also deglaze the pan to the pot cause that is a lot of flavour and add some root veggies, usually carrot for some sweetness. And last year I got myself a crock pot so I can now do a good 8 hour simmer for all to combine in peace. The basic ingredients of this recipe are still the same, as is how I do it. I've just nudged some elements to one direction or another. I've had 11 years to match it to my taste since this video was released on YT :D

But heavy drinking is a leading cause of heart attacks !...drink causes inflammation which in turn causes plaque build up , increases the red blood cells , making the blood thicker , strain on the heart, high blood pressure.
