Hello and welcome to a little bit of slow living in my summer kitchen (relaxing vlog) here at the Carriage House. Tonight for dinner, I’ll be making chicken tostadas with a tangy slaw along with fresh homemade pico de gallo. We’ll be using fresh ingredients from our little garden, and just simply enjoying & being mindful in the kitchen. I hope you enjoy your visit here at the Carriage House, and I hope all is well! Chicken Tostadas with Avocado & Tangy Slaw Recipe www.williams-s...
Fresh Pico de Gallo:
5 Roma Tomatoes, diced
1/2 Cup Red Onion, diced
1/2 of a medium to large jalapeño, diced (cored and seeded of you like it more on the mild side)
2 Tsp of Fresh Garlic, minced
About a handful of fresh cilantro, chopped
The Juice of 1 Lime
Salt and pepper to taste

Hi everyone, and thank you for stopping by again or thank you if you're new:) I hope all is well! Also, a quick update, I'm feeling much better and thank you so much for all your sweet comments, and prayers. I just need to change my diet to have better "gut " health...it won't hurt to loose a few pounds as well! We may take one last test, on my gall bladder just in case, but everything else seems to look ok...lots of Dr appts this week :( But, I really hope you all doing wonderful, and thanks so much for watching! 😘🌺

My gut was in pretty bad shape 3.5 months ago. I chose to go keto for 5 months. I feel so good now and am down 18 pounds. I will switch to WW at the end of the 5 months to maintain a healthy lifestyle. Gut issues are not fun❤️

Everyone always thinks I'm weird because I can sit and read a cookbook like a regular book. I love the Gooseberry Patch cookbooks because of all the stories and tips in them. I receive them as gifts quite often.

Hey Becca! Another wonderful and relaxing video. I enjoy watching you cook. I love going through cookbooks too and there is nothing like making food from a cookbook recipe. Using a recipe from your phone may be convenient but I still love following directions from an actual cookbook. I guess I'm just "old school"..lol! @@TheCarriageHouse 😄 111 Days Until Autumn 🍁🎃🍁 One thing my father & grandmothers and aunts taught me about Mexican food & cooking, sometimes it's difficult to keep traditional or authentic. Because we're always tempted to add or take away from those traditions. Not to improve on them, but to make them more our own. For example... Mexican Meatball Soup a.k.a. Albondigas. I was taught to make the meatballs from ground beef, rice, salt & pepper. But I make them from ground beef, rice, pepper, cinnamon, chopped cilantro and chopped mint. Lol... My dad thought I was crazy. But he soon became a fan. ❤😎
