In-between I noticed your freezer is plugged direct, this our country light that fluctuates holds me back from not using a freezer without a stabilizer

Great job in reorganizing your kitchen. Another thing you can do to give yourself some more space is to use the vertical spaces in your kitchen. You see where you have your cups and paper towel roll, you can get something to put both in. You can even get a 3 tier spice rack, which will allow you to put everything together nicely and giving you more counter space.
