Small-Pot Rice Noodles - The authentic Yunnan street delicacy

Yunnan people cannot live without rice noodles. The best small-pot rice noodles use Dai's sour liquid rice noodles. Ferment the new rice of the season to grind, settle and filter, boil and pound to make the sour liquid rice noodles. It takes a long time to make but has a unique flavour. The small-pot rice noodles are the most common and popular way to eat rice noodles.
Boil the broth in a small copper pot to add some meat sauce and greens. Season with acid pickles and chilli oil. You will never have enough of it here in Yunnan. Let's go and enjoy the rice noodles.

In Thai we also have this similar noodle; it’s referred to as “kanom jeen” which can be translated as “Chinese snack.” Actually, I’ve been curious about why it’s called Chinese snack but now I know why! Thanks for sharing your culture!! :DDD

I grew up in Kunming, Yunnan. MIXIAN (rice noodle) is something that the Yunanese eat almost every day. Now living in a different county for years, MIXIAN is always the first thing that come across my mind when I think about my hometown. Love this episode a lot. I'm sure she sharpens it off-camera but either way, she uses those nice natural wood cutting boards or chopping slabs. Those are definitely easier on an edge as oppose to some of the refined-wood or even plastic boards we use in the West. But yeah, that knife is so versatile and she got some skills too

This girl is living a Studio Ghibli life. I wish there’d be a video with Studio Ghibli style, like a day in her life with no talking to the audience but just nature sounds. My mother loves the sound of harvesting, and I love the rustling of the wind. Sometimes I think about this life, then I wonder why people aspire for ‘high-end’ jobs when you could have something like this. Imagine, doing your everyday life and just recording it and still getting money while living at your own pace. The fields will exercise you, the air will heal you, there are no society expectations. That sounds perfect to me!
