Pizza shops are easier on cleanliness for sure plus pests are not nearly as bad the dry flour etc helps…the biggest issue is knowing your food cost it’s low food cost biz for sure 50 cents a pizza can kill you with inflation like it is now whew

He's not wrong about staff. I'm a manager at my job, the more people you have, the more potentially bad employees you have to deal with. Productivity, attendance, attitudes, all that, the worst part for me. I hate that drama side. Having to have conversations about doing wtf your told. Stop standing around and talking on the phone, disappear for 30 minutes "I was in the bathroom", etc. If I opened a business, I'd do what he did. Just need 2 good people and that's it

You need to be able to pay those two good employees well enough to be there and do the work of multiple people though. Can’t ask them to do a hand full of task then pay them half of what they deserve. America has a real problem with that in today work force. This guy seems to have it down though kudos to him.

@@SAUCE206 And my job doesn't. I work for a large retailer. Got a store manager that goes after people for whatever reason. One of them was one of my employees. He's great, knows how to do everything. She decided she wanted him "out of the building" He's a friend, so I warned him. He's now transferring to another store. I'm down another employee. He'll be replaced with someone terrible, I'm sure, if at all. But the same amount of work will be expected. When it doesn't get done, because obviously, she'll come down on me. I'll be out the door shortly after

I work at a red Robin's who has about 30 kitchen staff snd only 5 of us work our butt's off and try to make the kitchen run as smoothly as possible, the rest of the people just hang out

The owner is doing it right. Keep it simple and if someone wants something else, be nice and direct them to a place that has what they are looking for. If I were near this place, I would probably be a regular customer. Too bad I'm hundreds of miles away...

I notice he’s letting the pizza steam off tilted on the box edge before cutting. I like that 😊 Although I always used the corrugated box liners for that very purpose it keeps the bottom crispy 😊 . I cooked south shore bar pizza for 18 years at some our oldest and famous joints .

@@krotchlickmeugh627 we ended up going to Sally's in Woburn, treehouse brewing in tewksbury, and then garlic breath... And all were fantastic! Garlic breath has a super cool retro vibe and fantastic pizza! There are only two tables, so you may want to call ahead if you're planning on dining in.

I always wondered if you can just throw in round pizza shaped dough in oven first,without any toppings,for five minutes.Then add toppings,and put back in oven,for extra crispy crust?? Love this video,cheers!!

Honestly the toppings and cheese handle the cooking for long periods rather than the dough. You can ask most places for a well-done pie and they'll come back extra crunchy. Of course protein %/water %/fermentation all play a role as well, but there's no changing that!

A year ago, I actually thought of doing something similar where I live in Warsaw, can get the idea of simplicity bringing quality as also keeps costs low. Instead I started a hot sauce business instead using a similar principle 😂 Looks solid there though!

I thought this place was perfect, too... but I will say this... there is something special about ordering a small pizza to house all by yourself for lunch, and you know it JUST came out of the oven. You can't replicate that feeling with just "Well, a couple of slices is a small pizza." It's not fresh out of the oven, though. :/

I like the old school simple menu pizza shop but the only item i would add (even the old school do it too) is a calzone or rolls and it could be filled with whatever toppings go on the pizza plus mozzarella cheese. Nothing needed to be bought its all the ingredients that's already there.

Wonder if he would make a calzone with just pepperoni and cheese with sauce on the side? A guy from Philadelphia opened a pizza shop locally several years ago. His calzone only had mozzarella and the toppings(fillings) you chose, usually pepperoni. That would be a simple item for him to add, especially for the lunch crowd.

I live in New York and I’ve been to Paulie Gee’s, Scarr’s, etc. That style combines several things I don’t like in a pizza. Overcooked, too thin, too chewy, too crispy. Hipster pizza. I don’t mind a little char, but it has to be soft inside. Also, the sausage has to have flavor and not placed on the pizza in large, lazy chunks.

ive been saying this long time... keep it simple, do it well... you will make people happy and keep coming back... the only reason that i would maybe say to be little more diverse, is have just a regular salad, and then another salad.. and dessert.. have one chocolate item, one non chocolate non caffiene , just as u have soda u have coke and sprite and possibly lemonade or tea or fruit punch/juice ... and its pizza so its kid friendly no need for chicken tenders or any other !

That's how you do it. Do one (or two) things really well. Little Ceasars back in the day had it figured out. One or two pizzas and thats it. In and out the door. Now they try to be a full pizzeria menu and have tanked the business (again).
