i’ve found that pan frying the dumplings instead of boiling them is more forgiving since if you don’t have the seal right, they burst open in water, but in a pan they’ll hold their shape regardless. also you can get nice browning on the bottom if you want more texture which i found quite nice. either way this recipe is fantastic and made me actually like tofu :)

Got so excited about this recipe.. My wonderful neighbours picked up the dumpling wrappers when they were out. I did struggle with the pleating but they had a dumpling form device that worked perfectly. They turned out great but thinking I need to cook them under the time stated as they didn’t stand up when serving. BUT I made some for my neighbours and for me and we enjoyed them.💕👍🏻 thanks for another great recipe Wil. Lynn🇨🇦 PS.. will try the pleating next time!!

What a relaxing, informed manner you have. I just discovered you today and immediately subscribed. I have made homemade gyoza and dipping sauce for decades (I am very old 😉). I will add two ideas for your viewers. I agree with you regarding to not worry about your pleats being perfect when you begin. But you will need to ensure that the dough is WELL SEALED. You don’t want them to burst open while cooking. Second, I make several sheet pans at a time. After making the filling in the kitchen, I move all necessary items to my big dining room table, and with a friend sitting across from me, we companionably visit while pleating dumplings, and then freeze, bag once frozen and split the bounty with one another. An absolutely FUN afternoon. 🤗💕

I finally got around to making this recipe and Wil’s chili oil. Delicious! Definitely takes a little practice to get the pleating technique right but I was able to wrap 40 dumplings with this amount.
