Shinichi, thank you and your lovely mother for this recipe. I loved hearing you talk to her in Japanese, it reminds me of my late mother. I was craving egg plant so I bought some the other day but couldn't decide how I wanted to make it. Now, I'll use this recipe for our dinner tomorrow: hot rice, salmon patties, and this egg plant recipe. Thanks again! ❤
