@@Armadillopepper I was researching honey bourbon butter glaze and although I am a sub, missed this from before. Still love it! It looked amazing! I pay particular attention to what you do. It's rarely anything exotic, it's just amazing ideas and simple ingredients. Butterflying open drumsticks, you were the first. It makes so much sense! I'm just a fan, but yeah a redo is in order.

I am so impressed. That looks amazing and sounds delicious. I LOVE Salmon. Just bought a used smoker... (Not BBQ and all but still excited) and I am binging on the salmon videos. Yours is Especially good. Than You. and I love the Grill Mats. I use them in my dehydrator.

Jeff, that looks so amazing. I'm going to have to brine some salmon soon. Where did you get your grill mat, and does it work better than non stick foil, since it's over the unlit side? I'm trying to decide if I want to invest in one. Loved that sauce!! It'd probably be great on several things!! 💗

I got 2 in a package. I think they were $20 at Amazon. I really like it for seafood. We have probably used one of them 8 or 9 times already. Just rinse off the big stuff and throw it in the dishwasher.

I got my grill mats at Costco last year. 3/$20... but I got an advertisement in my email last year for 5 for $15. So look on line for something great. Good Luck. I also use mine in the Dehydrator. I cut them to size and they are amazing as catch alls at the bottom, semi-liquids, superfine minced.... that would otherwise fall through my dehydrator mesh.

At minute 4:34 notice the white exudate on the surface of the fillets. This happens when the cured fillets are not fan dried before smoking. The result is an inferior product. If the fillets were placed on a rack after the brine was completed and were placed in front of a fan for several hours to form a "skin" that contains all the juices and flavors the results would be significantly better. Experts that commercially smoke salmon or do it for a hobby all know this.

David the final result would have been much better if the fillets had been fan dried before smoking. I have been smoking salmon for 35 years and I learned about the importance of fan drying prior to smoking either cold smoked or heat smoked from a man that had been smoking salmon for 40 years when he graciously gave me his trade secrets 22 years ago. .

Or in stead of Fan drying you can pat dry and place on racks and back in the fridge overnight. Just another way but a needed step, drying.

Probably one of my top 3 or 4. Cherry rubbed salmon is one of my favorites. We did a Cesar planked salmon with shrimp sauce this pear weekend Nd it was awesome.

Karl Krasnowsky Internal temp of the salmon is what to watch. Time will vary based on grill temp, outside temp, how many times you open the lid, thickness of filet, etc.
