This is my process for a fermented hot sauce using smoked peppers using my UDS ugly drum smoker.) This video specifically shows the process from beginning to the fermentation vessel, a PART 2 will be coming to show the fermentation and processing side of it. This hot sauce lasts well over a year in the refrigerator and has fantastic flavor. Probiotics from the naturally occurring bacteria are an added plus.
