This is the only youtuber to stop the cooking at 110 degrees, as you know, when you tent the temp continues to raise. It will get to 113 to 115 degrees, which is a good temp for medium rare. This hunk of meat will cost you over $100 , so don't over cook like the other youtubers do when they take if off at 125 degrees and let it raise to 130 and try to tell you that is medium rare. Reverse sear is good,I use the butter method, cover the prime rib in seasoned butter. I sear mine at 500, 5 min per lbs, than drop the temp to 225 until I reach 130.

I smoked a prime rib for the first time last Christmas on my YS640S. I was happy for a first try, and have wanted to have another go but prices were holding me back. But this is tempting me. Everything Cattlemans Grill I have tried is EXCELLENT!

When I do these I like to let them rest and slice them then a quick sear over a fire made with charcaol jack Daniel's whiskey barrel chips, that way you hey a good smoke flavor throughout, vs just on the outside edge. Best steak you'll ever eat!

Great recipe , i will try it! one suggestion, a straight slicer works better on prime rib than a serrated edge. more slicing less sawing.

I just did one last weekend and I checked the temperature it was like 90° internal went out there 15 minutes later and it was 108😂... I put the cooking grate 2 in over the charcoal and just let it sear in lots of fire for about 30 seconds on each side and then it was perfect after the resting period

My two cents: We have a prime rib for Christmas. I make it medium Rare, but some like theirs medium-well. I use my electric hamburger grill for those who needs a slice done a little more. At high, it only takes a minute or so on each side.

Very nice! On a gas grill you can turn on one side of the burners and place your prime rib over the burners that are off. If you have a smoke tube, place it in there to get a nice smoky flavor.👍

Very nice result. Next time use all 14” of that Dalstrong slicer and make it through in two passes thus eliminating those “saw” marks. If it tasted half as good as it looked you hit a home run.

Thanks for the video! I've always taken mine off at an internal temp of 130 for a great medium rare. You took yours off at 110. That surprised me! Did the open flame sear raise the internal temp? Just curious what your final internal temp was when you sliced it open. Looked fantastic! Will be doing this on Xmas!

Remember that carry over heat will raise the meat an additional 10-15 degrees while you rest it.
