chuck roast (3-4 pounds)
1 yellow or white onion (sliced)
3 cups beef stock
Spice: Suckle Busters SPG (salt pepper garlic)
step 1: Rub your Beef chuck with SPG make sure to also get the sides for a good crust.
Step 2: place in the fridge for 20 min so it will soak in
Step 3: place on the smoker for 3 hours at 225 degrees spray with 1 cup of beef broth every hour.
Step 4 : Remove from smoker and place in a pan with onions and Beef broth.
Step 5: place beef chuck back in smoker for another 3 hours and turn the temp to 250 degrees.
Step 6: remove from smoker and cover tightly in aluminum foil and place back on the smoker until the internal temp reaches 205 degrees.
step 7: once it reaches 205 pull it out and let it rest for 20 min before cutting into it.
