protip: instead of broth, use evaporated milk. there are several benefits... 1, it'll cause the cheese to emulsify more thoroughly for a more homogenous and smooth queso. 2, in concert with the meat grease, it'll cause the whole thing to stay fluid at room temperature. that way you don't have to heat it up to pour it on stuff. 3, it somehow brings out more of the cheese flavor. i don't know how, but it really does. and make sure to use evaporated, not condensed. evaporated is just straight milk; condensed is sweetened.

@@goodfellow5390 While it's almost impossible to find a cowboy who can cook with such a loveable personality in the big city, even in smaller cities they aren't many that can stack up to Kent from my personal experience. I grew up in a small town in Oklahoma (Clayton) surrounded by nature and we have plenty of ranchers, farmers, and fisherman. As kind and entertaining as they are, you will be remiss if you think many of them have the same personality as Kent. My grandmother is from WIlmore, Kansas and there's even less people there. Now if you expand the criteria out to just an older southern/country guy then there are plenty of those around. Kent Rollins is special and isn't in the same league as them. You don't get to 1.28 millions subscribers without the engaging personality that Kent has while doing the same thing he does. How many people do you know that travels around with a chuck wagon to cook for others while catering? He's been on plenty of shows such as Throw down with Bobby Flay (who Kent destroyed), Chopped, the news, and so forth. Kent is also a published author (#2 best selling cookbook on Amazon around the time it was released and a staple on many recommended list) and has been in a few magazines. You can't tell me there are many like Kent Rollins. I find it hard to believe there's even a single person remotely close to how Kent is with his level of success and occupation.

Good evening to you and Miss Shan. My late father used to make this every now and then when I was growing up. The Velveeta is definitely a must in a cheese dip. He added a few other things to but it was pretty much the same as your queso. I learned how to cook from my dad, he was a school trained chef. And bbq was a second love for him and he instilled that in me. Your way, really reminds me of my dad. Thank you for your time and content. Keep it up.

Hey Kent been watching for a while but first time commenting. Just wanna add a tip. If you're wanting the cheese to have that smooth texture where the fats don't separate add a little sodium citrate to that broth(best to boil it to mix well, 1tsp per cup of liquid) before hand. It'll give that cheese the nacho cheese like texture, super smooth and creamy! Its amazing and I'm sure will only add to that goodness. The wife and I have been experimenting the last couple months with smoked queso ourselves and the biggest change was adding the sodium citrate.
