There's such a sincerity to your videos I deeply appreciate. As a veteran you get used to people saying things like "Thank you for your service" as a reflex. People say things on auto pilot. You really seem to mean every word you say, even the stuff you say all the time, so I always totally trust you and your recipes. People might not believe when I say I learned to make good sushi from a cowboy but I did and now I gotta try some tacos too

Buffalo wing joints used to make up 5 gallon buckets of 50 wings. That's where the term bucket for 50 wings came from. The buckets had holes drilled in the bottom for drainage and they would stack the buckets. I have used whatever liquids to take all the goodness out of blenders and such for EONs. I do the same for any ketchup, BBQ sauce, Sauces, or what ever condiments still have some goodness in the bottles. I use a broth at times, or my fav, I use Whiskey, vodka, and/or wines to clean out the bottles.. this cleans out a bottle or jar nicely, then recycle it, or use the bottle again, putting what you don't use, back in the bottle for another day... have a great day

Then I thought you appreciate that you made a delish Enchilada Salsa/Sauce & I bet you can whip them up mega good with the Mexican "queso" you wisely selected, plus add shredded cabbage or lettuce & etc. Pluuus, IF you like "Mole", just add either fresh peanut butter(or bought) or roast/toast peanuts with almonds, cumin, cinnamon, blend well. Then pour in a lightly oiled pot, add a disc of Mexican chocolate. Simmer on low adding broth IF too thick n to also make sure Chocolate is melted...for @ 30mins. Then add cooked Chicken n simmer covered for @ 20mins. Serve with "soda de arroz"/Spanish rice or white rice. Sprinkle sesame seeds over Mole upon serving & enjoy with Tortillas, either corn or Harina, both are delish. Even Mexican bread like Bolillos, to dip, yum! Buen provecho, enjoy! I used to work on a ranch in south-west Texas when I was young and there was this old Mexican lady who did all the cooking. Her chili, which I had her teach me is very similar. Of course you don’t let it simmer for quite as long to keep the meat a bit more intact. It has the same ingredients but in addition there’s some dark chocolate and chicken broth and also the meat includes oxtail, which give amazing flavor. And if these tacos taste anywhere near as good I’m going to have to try making them!

Absolutely love making Birria tacos. If you make the broth thinner, you can skim the grease off the top when done and use that to fry the tortilla. Makes them nice and crispy. They are better with the charred bits and crispy beef and crispy cheese around the edges!

Yes. Everything you said plus what BL said. Lots of ways to make birria but I prefer it with the thinner broth. As this was more of a stew that ended up looking a bit more like BBQ. Also having the thinner broth on the side to then dunk your taco in is delicious.

I'm an American, but if I ever move to a different country, I would move to Texas. I spent 4 days in Huston, and the food was amazing! you guys mater cooking meats! The girls at the Colorado were very friendly too!

Looks GREAT!! I like how you scrape the sauce from the blender lid, and add water to get the remaining contents out of the blender!! I have always done that too. It's a BIG pet peeve of mine when I see cooks/chefs on so many channels that waste ingredients or leave excess ingredients in the bowls! It only takes a second to grab a spatula!

I just found out how to make birria about 6 months ago and I make it once a month now. I have, somewhat, perfected my recipe. SO what I would add to yours is this: after your done cooking the batch, skim the red fat off the top of the consume and use that to coat the shells. It gets very crispy and doesn’t tend to burn like the pepper chunks do (even though I personally like the char) second you can give those peppers a toast or roast before adding them to water for a little deeper flavor and maybe add one dried chipotle in there for smoky flavor. LASTLY add some diced onions, lime, and cilantro with that meat and cheese before making the actual quesobirria taco for some added flavor and a little crunch to them. I love the videos and love your relationship with your dogs!

Great video Kent, according to birria etymology, the original birria uses lamb or billy goat, and the most foundational recipe is baked in a clay oven using dense wood. It would be interesting to share recipes someday.

My parents are from Deming New Mexico. My mom use to make this, she would spend the entire day making four tortillas and serve it with beans and rice on the side. Let me tell you. That was some good eating. Just remembering and kind of brought a tear to my eye.

I really, really love birria & I’m going to whip up a batch of those yummy “red tacos” next week just like Kent did with one change. I’ll strain the sauce to get the pieces of chillies because they don’t mix well with people who deal with indigestion.

Interesting with the beef short ribs. Traditionally, birria is made with goat but many make it with beef because beef is more readily available. When my mom is making beef birria, she uses diezmillo (chuck) and chamorro (upper shank). I'm going to have to get my mom's exact recipe and decipher it to save it for future generations. When I ask her "How much salt?" and she cups her hand and says "This much." doesn't work when everyone has different sized hands.

I just came across your videos for the first time this evening. And I am SO glad that I did. Your respect for the culture(s) of the food you are preparing is outstanding. Your passion for food is so genuine, it really is a breath of fresh air!! If you have not tried it yet, you should look into making some traditional Puerto Rican dishes. It would be awesome to see a cowboy's take on some big hits like Mofongo or Alcapurrias. Before moving to the States when I was 4 years old, my aunt had a little snack stand at the end of the street. Everyone on the block would come down on Fridays after work to buy some Alcapurrias. It was always such a great time, and it truly brought the community together. Though us as viewers can't be there to try the food with you, I think your channel does an exceptional job of creating a sense of community. I look forward to more videos, Uncle Cowboy. Cheers!
