I watched this video countless times throughout the year waiting for today Thanksgiving 2024. I also watched the other turkey videos Chud did in later years but this was the one I wanted to master. I conquered Thanksgiving. The turkey was delicious. I give thanks for Chud’s videos !

I've rocked a turkey breast in my Weber more than once on Thanksgiving. Brined it overnight, smoked it for about 4 hours or so to temp. Gives you time to make cranberry sauce, sourdough sage stuffing and fire roasted poblano and cheddar mashed potatoes. Smoke roast the acorn squash while the turkey rests, uncork a few good bottles of vino and Bob's your uncle. Happy Thanksgiving!

Chudsgiving was great. I have tried lots of wet brines, and bacon wrapping but never ended up with such a juicy tender turkey following Chud's advice, I even followed his gravy recipe everyone at the Thanksgiving table was impressed and got compliments, This is the best Turkey I ever have had, I even said the same and I usually don't comment on my smoked meats. This will be my go to smoked Turkey recipe. I have to try making the bacon dressing for sure.

Everything was looking outstanding. However making a killer cranberry sauce takes very little time. I realize video length can be an issue but I think most of us agree that we need more Chud!

Have been a fan of the dry brine process for a while, steaks, chicken all come out excellent. I know I’m a year late to comment, but I’ve had my eye on this video for a few months now. That is absolutely the best looking turkey and stuffing I’ve ever seen. So I’m doing my best to replicate it. We have a 12.5 pound turkey dry brining as we speak. Getting ready to make up the compound butter now. My question is I swear he says he smoked this turkey for 2.5 hours at 300 but I’m probably wrong, that just doesn’t seam long enough. So how long should I let this bird smoke or just keep checking internal temp?

Hey Bradley, I did this entire process you showed in this video and it turned out great. The turkey tasted great the only problem was I had a really hard time maintaining the temperature up to around 300° to 350° later into the cook. To begin with it was no problem but after a couple of hours of cooking keeping the temperature up was hard, so I got the internal temperature to 145° but it wouldn’t go any higher. Can you help with advice to keep the temperature up? I used an offset smoker with a side fire box.

God Dang! I made some bomb a** turkey today. I smoked a 24 lb turkey (wife's purchase and quite a large bird), spatchcock, at 325 in roughly four hours. The butter compound is a mess during the application but man, does it crisp that skin. I followed the directions of this fine pit master and our stock was: forget about it...good.

every remove the breast bone before the smoke? I did that for all our turkey orders this year for the first time it worked great and customers really liked not having to deal with it during carving just slice and serve. Great job guys!!

Maybe it's because I'm Caribbean, but I was waiting for at what point were you going to wash that partially thawed/frozen bird? Or does the amount of salt in your dry brining process eliminate the need for it? In the islands we get out our lemons and scrub under running water to remove the pin feathers draw the blood in the cavity out etc. Thanks.
